For years, we've been told that a low-fat, high-carbohydrate diet is the way to maintain a healthy weight.  It doesn't work.  The G.I. Diet is an easy to understand as a traffic light.  White bread, rolls, and bagels, for example, with their high GI number-- a baguette rates a 95 on a scale of 100, a bagel 72-- are “red light.”  These foods are digested very quickly, resulting in a spike in blood sugar, a release of insulin, storage of fat, and a quick return to the diet-dooming hungry feeling.  Low-GI 100% stone-ground whole wheat bread is “green light” because the body takes much longer to digest it, so there's no spike in blood sugar and a much longer feeling of satiety.  In the “yellow light” proceed-with-caution category are whole wheat pita, sourdough bread, and many whole-grain bread products.  To kick-start weight loss, eat only foods in the green column– lean meats, fish, nearly all vegetables and fruits, long grain rice, in moderation, most beans and a wide range of dairy products.  Then to maintain weight loss while preventing any weight gain, add in foods from the yellow column-- bananas, popcorn, nuts, turkey bacon, and pasta.
